Ingredients

- 2 medium zucchinis, cut into thin strips
- 1 cup breadcrumbs (regular or whole wheat)
- ½ cup grated Parmesan cheese (or nutritional yeast for a vegan version)
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 2 large eggs (or flaxseed mixture for a vegan substitute)
- Cooking spray or a light drizzle of olive oil
Instructions
- Wash the zucchinis and cut off both ends. Slice them in half lengthwise and then into thin strips, about half an inch wide. Toss with a pinch of salt and let sit for 10 minutes.
- Prepare the breading station: whisk the eggs in one bowl and combine breadcrumbs, Parmesan, garlic powder, Italian seasoning, salt, and pepper in another bowl. Dip zucchini strips in the egg mixture, then coat with the breadcrumb mixture.
- Preheat the air fryer to 400°F (200°C) and lightly spray the basket. Arrange zucchini fries in a single layer and air fry for 10-12 minutes, shaking the basket halfway through. Let cool before serving.
Notes
Use fresh zucchini for best results. Experiment with spices for unique flavors. Leftovers can be stored in the fridge for up to 3 days or frozen for 2 months.
