- 6 cups mixed greens (a mix of spinach, arugula, or your favorite greens)
- 1 large apple, thinly sliced (crisp varieties like Honeycrisp or Fuji work best)
- 1 cup walnuts, roughly chopped
- 1/2 cup feta cheese, crumbled (optional)
- 1/4 cup apple cider vinegar
- 1/2 cup olive oil
- 2 tablespoons honey or maple syrup
- Salt and black pepper to taste
Instructions
- In a small bowl, combine the apple cider vinegar, olive oil, and honey (or maple syrup). Add a pinch of salt and black pepper. Whisk until well combined.
- In a large bowl, toss together mixed greens, sliced apple, and walnuts. If using feta, add and gently fold together.
- Drizzle the vinaigrette over the salad and toss to coat. Serve immediately or let sit briefly to allow flavors to blend.
Notes
Use the freshest ingredients possible for the best flavor. The vinaigrette can be prepared ahead of time and stored in the fridge for up to a week.
