A vibrant and nutrient-packed salad combining fresh kale, sweet apples, dried cranberries, and creamy goat cheese, all tied together with a homemade vinaigrette.
Ingredients

- 1 bunch green curly kale, leaves removed from the stem & chopped
- 1 apple, cored & diced (Honeycrisp or Cosmic Crisp recommended)
- ½ cup dried cranberries
- ⅓ cup goat cheese, crumbled
- Olive oil, for massaging the kale
- 2 Tbsp olive oil (for the vinaigrette)
- 2 Tbsp vinegar (or apple juice/white grape juice)
- 2 Tbsp maple syrup
- Salt, to taste
- Cracked black pepper, to taste
Instructions
- Make the Vinaigrette: In a small bowl, whisk together olive oil, vinegar (or your juice substitution), and maple syrup. Season with salt and cracked black pepper to taste. Set aside in the fridge.
- Massage the Kale: In a large mixing bowl, add chopped kale and drizzle with a splash of olive oil. Massage the leaves for about five minutes until tender.
- Assemble the Salad: Add diced apples, dried cranberries, and crumbled goat cheese to the kale. Pour vinaigrette over the top and toss gently until coated.
Notes
Allow the salad to sit for a few minutes to let the flavors meld. Adjust sweetness with maple syrup as desired.
