A warm and comforting chicken noodle soup infused with aromatic ginger and garlic, perfect for cozy dinners.
Ingredients

- 2 lb boneless skinless chicken thighs
- 6 garlic cloves, thinly sliced
- 1 piece ginger (3 inches), peeled and finely chopped
- 1 bundle scallions (6 to 8 oz), thinly sliced, divided into whites and greens
- 4 tsp kosher salt
- Freshly ground black or white pepper, to taste
- 10 cups water
- 8 oz dried ramen noodles or dried curly noodles
- 1 cup carrot, cut into thin matchsticks
- 1/4 cup black rice vinegar
- 1/4 cup soy sauce
- 2 tbsp toasted sesame oil
- Crispy chili oil, to taste
Instructions
- In a large pot, heat a splash of sesame oil over medium heat. Add the sliced garlic and chopped ginger, stirring until fragrant.
- Add the white parts of the scallions and stir in.
- Nestle the chicken thighs into the pot, season with salt and pepper. Pour in the water and bring to a gentle simmer. Cover and cook for about 30 minutes until chicken is tender.
- Lift the chicken out, shred it into pieces, and return it to the pot.
- Add the ramen noodles and matchstick carrots, cooking for 5-7 minutes until noodles are tender.
- Stir in soy sauce and black rice vinegar, allowing to mingle.
- Serve with green scallions and a drizzle of crispy chili oil on top.
Notes
Feel free to customize with your choice of proteins or extra vegetables. Adjust the heat with more chili oil if desired.
