Description

A warm and comforting chicken noodle soup infused with aromatic ginger and garlic, perfect for cozy dinners.


Ingredients

  • 2 lb boneless skinless chicken thighs
  • 6 garlic cloves, thinly sliced
  • 1 piece ginger (3 inches), peeled and finely chopped
  • 1 bundle scallions (6 to 8 oz), thinly sliced, divided into whites and greens
  • 4 tsp kosher salt
  • Freshly ground black or white pepper, to taste
  • 10 cups water
  • 8 oz dried ramen noodles or dried curly noodles
  • 1 cup carrot, cut into thin matchsticks
  • 1/4 cup black rice vinegar
  • 1/4 cup soy sauce
  • 2 tbsp toasted sesame oil
  • Crispy chili oil, to taste

Instructions

  1. In a large pot, heat a splash of sesame oil over medium heat. Add the sliced garlic and chopped ginger, stirring until fragrant.
  2. Add the white parts of the scallions and stir in.
  3. Nestle the chicken thighs into the pot, season with salt and pepper. Pour in the water and bring to a gentle simmer. Cover and cook for about 30 minutes until chicken is tender.
  4. Lift the chicken out, shred it into pieces, and return it to the pot.
  5. Add the ramen noodles and matchstick carrots, cooking for 5-7 minutes until noodles are tender.
  6. Stir in soy sauce and black rice vinegar, allowing to mingle.
  7. Serve with green scallions and a drizzle of crispy chili oil on top.

Notes

Feel free to customize with your choice of proteins or extra vegetables. Adjust the heat with more chili oil if desired.
