- 8 oz. pasta (such as fusilli or rotini)
- 2 apples, diced (such as Honeycrisp or Fuji)
- 1 cup celery, chopped
- 1/2 cup walnuts, chopped
- 1/2 cup dried cranberries
- 1/4 cup red onion, finely chopped
- 1/2 cup feta cheese, crumbled
- 1/4 cup olive oil
- 2 tbsp apple cider vinegar
- Salt and pepper to taste
Instructions
- Cook the pasta according to the package instructions. Drain and set aside to cool completely.
- Chop the apples, celery, and red onion. Combine in a large bowl with walnuts, cranberries, and feta cheese.
- In a smaller bowl, whisk together olive oil, apple cider vinegar, salt, and pepper. Drizzle over the salad and toss gently to combine.
- Let the salad chill in the fridge for about 30 minutes before serving.
