Description

A delightful balance of sweet and savory flavors, this Cozy Autumn Chopped Salad features mixed greens, apples, cranberries, and a refreshing apple cider vinaigrette, perfect for fall gatherings.

Ingredients

Scale
  • 6 cups mixed greens (such as spinach, arugula, or baby kale)
  • 1 large apple, chopped
  • ½ cup dried cranberries
  • ½ cup candied pecans
  • ½ cup feta cheese, crumbled
  • ¼ cup red onion, thinly sliced
  • ¼ cup apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon maple syrup or honey
  • ½ cup olive oil
  • Salt and pepper, to taste

Instructions

  1. In a large bowl, combine the mixed greens and the chopped apple. Toss to distribute evenly.
  2. Add the dried cranberries, candied pecans, feta cheese, and red onion, mixing until combined.
  3. In a small bowl, whisk together the apple cider vinegar, Dijon mustard, maple syrup (or honey), and olive oil until well emulsified. Season with salt and pepper to taste.
  4. Drizzle the dressing over the salad just before serving and toss gently to mix. Adjust seasoning if needed.

Notes

For a lighter option, omit cheese and use maple syrup in the dressing. Store leftovers in an airtight container in the fridge for up to 2 days, keeping the dressing separate.
