Instructions
- Toast the bread until golden brown.
- Poach the eggs in simmering water for about 3-4 minutes.
- Mash the avocado in a bowl and season with salt and pepper.
- Spread the mashed avocado over the toasted bread and place poached eggs on top.
- Drizzle with hot sauce and garnish with chopped scallions. Serve immediately.
Notes
For perfect poached eggs, use fresh eggs and create a whirlpool in the water. Ensure the avocado is ripe but not mushy.
