Instructions

  2. Poach the eggs in simmering water for about 3-4 minutes.
  3. Mash the avocado in a bowl and season with salt and pepper.
  4. Spread the mashed avocado over the toasted bread and place poached eggs on top.
  5. Drizzle with hot sauce and garnish with chopped scallions. Serve immediately.

Notes

For perfect poached eggs, use fresh eggs and create a whirlpool in the water. Ensure the avocado is ripe but not mushy.
