- 1 block of feta cheese (about 8 oz)
- 4 large eggs
- 1 cup cherry tomatoes, halved
- 2 cups fresh spinach
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh herbs for garnish (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- Place the block of feta cheese in the center of a baking dish, surrounding it with halved cherry tomatoes and fresh spinach.
- Drizzle olive oil over the feta and vegetables, and season with salt and pepper.
- Create wells in the mixture and crack an egg into each well.
- Bake for 20-25 minutes until the eggs are just set and slightly soft in the yolk.
- Garnish with fresh herbs if desired and serve hot.
