Ingredients

  • 1 block of feta cheese (about 8 oz)
  • 4 large eggs
  • 1 cup cherry tomatoes, halved
  • 2 cups fresh spinach
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh herbs for garnish (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Place the block of feta cheese in the center of a baking dish, surrounding it with halved cherry tomatoes and fresh spinach.
  3. Drizzle olive oil over the feta and vegetables, and season with salt and pepper.
  4. Create wells in the mixture and crack an egg into each well.
  5. Bake for 20-25 minutes until the eggs are just set and slightly soft in the yolk.
  6. Garnish with fresh herbs if desired and serve hot.
