  • 1/3 cup maple syrup
  • 2 teaspoons vanilla extract
  • 3 large eggs
  • 3/4 cup buttermilk
  • 8 tablespoons butter (for toffee sauce)
  • 3/4 cup brown sugar (packed, for toffee sauce)
  • 3/4 cup heavy cream (for toffee sauce)
  • 1 teaspoon vanilla extract (for toffee sauce)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a suitable baking dish (an 8×8 inch or a similar-sized dish works wonderfully).
  2. In a large bowl, combine the granulated sugar, brown sugar, and softened butter. Beat them together until fluffy and smooth.
  3. Add the eggs, vanilla extract, buttermilk, maple syrup, and mashed bananas. Mix until well incorporated.
  4. In a separate bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
  5. Combine the wet and dry mixtures until just blended. Pour into the prepared baking dish.
  6. Bake for 45–55 minutes, or until the cake is golden and set in the center.
  7. While the cake bakes, prepare the toffee sauce by combining the butter, brown sugar, heavy cream, and vanilla in a saucepan. Heat until melted and smooth.

Notes

Allow the cake to absorb the toffee sauce for at least an hour before serving. Best enjoyed warm, optionally topped with vanilla ice cream.
