- 2 pounds potatoes (about 4 large potatoes)
- 1 cup buttermilk (or your preferred milk)
- 2 large onions, finely chopped
- 1 cup Irish stout (or substitute with non-alcoholic malt or chicken broth)
- 4 tablespoons butter
- Salt and pepper, to taste
Instructions
- In a large skillet over medium heat, cook the sausages for 8-10 minutes, turning occasionally until browned and cooked through.
- Peel and chop the potatoes into even-sized pieces. Place in a pot, cover with salted water, and bring to a gentle boil. Simmer for 15-20 minutes until fork-tender, drain, and mash with buttermilk, butter, salt, and pepper until creamy.
- In another pan, melt 2 tablespoons of butter over medium heat, add the chopped onions, and sauté for 10-15 minutes until golden brown. Pour in the Irish stout and simmer for 5-7 minutes to thicken into a gravy.
Notes
For a healthier version, choose lean sausages and low-fat buttermilk. Leftovers can be stored in the fridge for up to 3 days or frozen for 3 months.
