- 1 lb ground beef
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 1 packet (1 oz) taco seasoning
- ½ cup salsa
- 1 cup refried beans
- 1 ½ cups shredded cheddar cheese or Mexican blend
- 6 large flour tortillas
- 2 tbsp vegetable oil
Instructions
- Heat a large skillet over medium heat. Add the ground beef and diced onion. Cook for 5–7 minutes, stirring occasionally, until browned and tender. Drain excess grease, then add garlic, taco seasoning, and salsa. Stir and let simmer for 3–4 minutes.
- On a flat surface, spread a spoonful of refried beans on a tortilla. Add beef mixture and shredded cheese. Fold sides and roll tightly like a burrito. Repeat with remaining tortillas.
- For the oven method, preheat oven to 400°F (200°C). Place chimichangas seam-side down on a baking sheet, brush with oil, and bake for 18–20 minutes, flipping once. For the skillet method, heat oil in a skillet and cook chimichangas seam-side down for 2–3 minutes per side until crisp. Let rest for 2 minutes.
Notes
Warm tortillas briefly before filling to prevent tearing. Add jalapeños or olives for extra flavor. Allow chimichangas to rest before serving.
