- 1 lb ground beef
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 1 packet (1 oz) taco seasoning
- ½ cup salsa
- 1 cup refried beans
- 1 ½ cups shredded cheddar cheese
- 6 large flour tortillas (burrito-size)
- 2 tbsp vegetable oil (for brushing/frying)
Instructions
- Heat a large skillet over medium heat. Add the ground beef and diced onion, cooking until browned and tender (about 5–7 minutes).
- Drain excess grease and stir in minced garlic, taco seasoning, and salsa. Simmer for 3–4 minutes.
- Lay a tortilla flat, spread a spoonful of refried beans, layer with the beef mixture and cheese, then fold and roll tightly.
- To bake, preheat oven to 400°F (200°C), brush with oil, and bake for 18–20 minutes, flipping halfway. For frying, heat oil and cook seam-side down for 2–3 minutes on each side.
- Let rest for 2 minutes before serving. Add toppings like sour cream, guacamole, or salsa if desired.
Notes
Use lean ground beef or turkey for a healthier option. Feel free to experiment with different cheeses and fillings.
