  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 packet (1 oz) taco seasoning
  • ½ cup salsa
  • 1 cup refried beans
  • 1 ½ cups shredded cheddar cheese
  • 6 large flour tortillas (burrito-size)
  • 2 tbsp vegetable oil (for brushing/frying)

Instructions

  1. Heat a large skillet over medium heat. Add the ground beef and diced onion, cooking until browned and tender (about 5–7 minutes).
  2. Drain excess grease and stir in minced garlic, taco seasoning, and salsa. Simmer for 3–4 minutes.
  3. Lay a tortilla flat, spread a spoonful of refried beans, layer with the beef mixture and cheese, then fold and roll tightly.
  4. To bake, preheat oven to 400°F (200°C), brush with oil, and bake for 18–20 minutes, flipping halfway. For frying, heat oil and cook seam-side down for 2–3 minutes on each side.
  5. Let rest for 2 minutes before serving. Add toppings like sour cream, guacamole, or salsa if desired.

Notes

Use lean ground beef or turkey for a healthier option. Feel free to experiment with different cheeses and fillings.
