  • 2 cups cooked pasta
  • 1 cup corn (frozen or canned)
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Preheat your oven to 350°F (175°C). In a large skillet over medium heat, add the ground beef and cook until browned, about 7-10 minutes.
  2. Drain excess fat, then add the chopped onion and minced garlic to the skillet. Sauté until the onion is soft and translucent, about 3-4 minutes.
  3. Stir in black beans, diced tomatoes, cooked pasta, corn, chili powder, cumin, salt, and pepper. Mix until well combined and heat through for about 5 minutes.
  4. Pour the mixture into a baking dish, sprinkle shredded cheese over the top, and bake for 20-25 minutes, or until the cheese is melted and golden.
