Ingredients

- 1 pound beef, sliced thinly
- 2 bell peppers, sliced (any colors you like!)
- 2 cups cooked rice
- 3 tablespoons soy sauce
- 1 tablespoon vegetable oil
- 1 teaspoon garlic, minced
- 1 teaspoon ginger, minced
- Salt and pepper to taste
- Green onions for garnish (optional)
Instructions
- Heat the vegetable oil in a large pan or skillet over medium heat until shimmering.
- Add the sliced beef to the pan, spreading it in a single layer. Let it cook for 2-3 minutes without stirring.
- Flip the beef and cook for another 2 minutes until browned and cooked through.
- Add the minced garlic and ginger to the pan and stir-fry for a minute until fragrant.
- Add the sliced bell peppers and cook for an additional 3-4 minutes until tender but still crunchy.
- Pour the soy sauce over the mixture and toss to combine.
Notes
For spiciness, add red pepper flakes. Feel free to customize with additional veggies like snap peas or broccoli. Use quinoa or noodles as alternatives for rice.
