A wonderfully creamy cheese dip featuring a rich blend of white cheddar, sharp yellow cheddar, and a touch of cream cheese, perfect for gatherings or cozy nights in.


Ingredients

  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour (gluten-free flour works too!)
  • 1 cup non-alcoholic malt or broth
  • ½ cup whole milk
  • 2 cups shredded white cheddar cheese (about 8 oz)
  • 1 cup shredded sharp yellow cheddar (about 4 oz)
  • 4 ounces cream cheese
  • 1 tablespoon Dijon mustard
  • 1 tablespoon Worcestershire sauce
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • 1 tablespoon freshly chopped chives
  • Soft pretzels or soft pretzel bites
  • Sturdy corn chips
  • Baguette slices
  • Grilled sausage (like kielbasa), sliced into 1/2 inch pieces

Instructions

  1. In a medium-sized cast iron pan over medium heat, add the sliced sausage and cook until golden brown and crisp (about 5-7 minutes). Remove the sausage and set aside.
  2. In the same pan, melt the butter and whisk in the flour, stirring constantly for 2-3 minutes until light golden.
  3. Slowly pour in the non-alcoholic malt or broth, stirring to avoid lumps; simmer for 2 minutes, then add the milk and simmer for another 2 minutes.
  4. Reduce heat to low and slowly add cream cheese and shredded cheeses bit by bit until melted and combined.
  5. Stir in Dijon mustard, Worcestershire sauce, onion powder, garlic powder, and chopped chives. Adjust seasonings to taste.
  6. Add crispy sausage back into the dip. Serve immediately with your favorite dippers.

Notes

For a thicker dip, increase the flour in your roux. This dip can be made ahead and reheated; enjoy with your favorite dippers!
