A wonderfully creamy cheese dip featuring a rich blend of white cheddar, sharp yellow cheddar, and a touch of cream cheese, perfect for gatherings or cozy nights in.

- 2 tablespoons unsalted butter
- 2 tablespoons all-purpose flour (gluten-free flour works too!)
- 1 cup non-alcoholic malt or broth
- ½ cup whole milk
- 2 cups shredded white cheddar cheese (about 8 oz)
- 1 cup shredded sharp yellow cheddar (about 4 oz)
- 4 ounces cream cheese
- 1 tablespoon Dijon mustard
- 1 tablespoon Worcestershire sauce
- ½ teaspoon onion powder
- ½ teaspoon garlic powder
- 1 tablespoon freshly chopped chives
- Soft pretzels or soft pretzel bites
- Sturdy corn chips
- Baguette slices
- Grilled sausage (like kielbasa), sliced into 1/2 inch pieces
Instructions
- In a medium-sized cast iron pan over medium heat, add the sliced sausage and cook until golden brown and crisp (about 5-7 minutes). Remove the sausage and set aside.
- In the same pan, melt the butter and whisk in the flour, stirring constantly for 2-3 minutes until light golden.
- Slowly pour in the non-alcoholic malt or broth, stirring to avoid lumps; simmer for 2 minutes, then add the milk and simmer for another 2 minutes.
- Reduce heat to low and slowly add cream cheese and shredded cheeses bit by bit until melted and combined.
- Stir in Dijon mustard, Worcestershire sauce, onion powder, garlic powder, and chopped chives. Adjust seasonings to taste.
- Add crispy sausage back into the dip. Serve immediately with your favorite dippers.
Notes
For a thicker dip, increase the flour in your roux. This dip can be made ahead and reheated; enjoy with your favorite dippers!
