A cozy family favorite, this Black Pepper Chicken combines tender chicken and vibrant bell peppers in a savory sauce, perfect for busy evenings.

- 1 lb chicken breasts or thighs, sliced into 1/4” thick pieces
- 1 tablespoon light soy sauce
- 1 tablespoon cornstarch
- 1/2 cup chicken broth
- 2 tablespoons light soy sauce
- 2 teaspoons dark soy sauce
- 1 1/2 tablespoons sugar
- 2 teaspoons coarsely ground black pepper
- 1/8 teaspoon salt
- 2 tablespoons peanut oil or vegetable oil
- 1 tablespoon minced ginger
- 2 cloves garlic, minced
- 1/2 white onion, chopped
- 2 bell peppers, chopped
Instructions
- Marinate the sliced chicken in a bowl with 1 tablespoon light soy sauce and cornstarch for 10-15 minutes.
- Prepare the sauce by combining chicken broth, light and dark soy sauces, sugar, ground black pepper, and salt in a small bowl; stir to dissolve.
- Heat 1 tablespoon of oil in a skillet, then sear the marinated chicken until golden, about 1-2 minutes total.
- Add remaining oil, sauté ginger and garlic until fragrant, then add onion and bell peppers, cooking until tender-crisp.
- Pour the sauce into the skillet, cooking until thickened, then return chicken to combine everything.
- Transfer to a plate and serve.
Notes
Feel free to substitute chicken with beef, turkey, or tofu, and adjust spices to your preference.
