Description
Blackberry Velvet Gothic Cake blends deep chocolate with tart blackberry for a moist, dramatic showstopper—perfect for celebrations and statement desserts.
Ingredients
1 3/4 cups all-purpose flour
3/4 cup unsweetened cocoa powder
1 1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup granulated sugar
1/2 cup brown sugar, packed
2 large eggs
1/2 cup vegetable oil
1 teaspoon vanilla extract
3/4 cup blackberry puree
3/4 cup buttermilk
1/2 cup blackberry puree (for glaze)
1 cup powdered sugar
1 tablespoon lemon juice
1/4 cup dark chocolate (optional, for glaze)
Fresh blackberries (for decoration)
Edible flowers or silver dragees (optional)
Instructions
1. Preheat oven to 350°F (175°C). Grease and line two 8-inch round cake pans.
2. Sift together flour, cocoa, baking powder, baking soda, and salt; set aside.
3. In a large bowl whisk granulated sugar, brown sugar, eggs, oil, and vanilla until smooth.
4. Whisk in 3/4 cup blackberry puree and buttermilk until combined.
5. Fold dry ingredients into wet just until no dry streaks remain; avoid overmixing.
6. Divide batter evenly between pans and bake 25–30 minutes, or until a toothpick comes out clean.
7. Cool in pans 10 minutes, then turn out to a wire rack to cool completely.
8. Make glaze: in a small saucepan combine 1/2 cup blackberry puree, powdered sugar, and lemon juice; warm on low and whisk until smooth. If using, melt dark chocolate and whisk in.
9. Assemble: place one layer on a stand, spread some glaze, top with second layer, then pour remaining glaze over top, letting it drip slightly down the sides.
10. Decorate with fresh blackberries and optional edible flowers or dragees. Slice and serve.
Notes
Serve at room temperature or slightly chilled; excellent with vanilla ice cream or whipped cream and extra blackberries.
Storage: keep covered at room temp up to 3 days or refrigerate up to 1 week; bring to room temp before serving for best texture.
Tips: use room-temperature ingredients for a smoother batter and better rise; mix only until just combined to keep the crumb tender; adjust glaze sweetness by varying powdered sugar.
Variation: swap in raspberry or strawberry puree; add chocolate chips to the batter for extra richness.
