- 8 oz fettuccine or egg noodles
- 1 lb shrimp, peeled and deveined
- 2 tablespoons Cajun seasoning
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 cup mushrooms, sliced
- 1 cup heavy cream
- 1 cup chicken broth
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions
- Cook the fettuccine or egg noodles according to the package instructions. Drain and set aside.
- Toss the shrimp with Cajun seasoning in a medium bowl. In a large skillet, heat olive oil over medium-high heat and sear shrimp for 3-4 minutes until pink and opaque. Remove and set aside.
- Add diced onion and minced garlic to the skillet, sautéing until translucent. Add sliced mushrooms and cook until tender.
- Pour in chicken broth and heavy cream, stirring to combine. Bring to a simmer and then return shrimp to the skillet. Season with salt and pepper.
- Combine cooked noodles with sauce and serve, garnished with chopped parsley.
Notes
For a lighter version, substitute half-and-half or a lower-fat cream. You can swap noodles for whole wheat or gluten-free options.
