Description

A creamy, Cajun-spiced shrimp stroganoff that is comforting and easy to make, perfect for busy weeknights or family gatherings.


Ingredients

  • 8 oz fettuccine or egg noodles
  • 1 lb shrimp, peeled and deveined
  • 2 tablespoons Cajun seasoning
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup mushrooms, sliced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. Cook the fettuccine or egg noodles according to the package instructions. Drain and set aside.
  2. Toss the shrimp with Cajun seasoning in a medium bowl. In a large skillet, heat olive oil over medium-high heat and sear shrimp for 3-4 minutes until pink and opaque. Remove and set aside.
  3. Add diced onion and minced garlic to the skillet, sautéing until translucent. Add sliced mushrooms and cook until tender.
  4. Pour in chicken broth and heavy cream, stirring to combine. Bring to a simmer and then return shrimp to the skillet. Season with salt and pepper.
  5. Combine cooked noodles with sauce and serve, garnished with chopped parsley.

Notes

For a lighter version, substitute half-and-half or a lower-fat cream. You can swap noodles for whole wheat or gluten-free options.
