Delightful and healthy yogurt bites featuring fresh blueberries and Greek yogurt, perfect for a snack or dessert.
Ingredients

- 1 cup Greek yogurt
- 1/2 cup fresh blueberries
- 2 tbsp honey or maple syrup
- 1 tsp lemon juice
- 1/2 tsp vanilla extract
- 1 tsp cornstarch (optional)
Instructions
- Combine blueberries, honey (or maple syrup), and lemon juice in a saucepan over medium heat. Simmer for 5 minutes, stirring occasionally.
- If using cornstarch, mix it with a little water and add it to the blueberry mixture to thicken.
- In a bowl, mix Greek yogurt with vanilla extract, adjusting sweetness with honey or maple syrup as desired.
- Spoon the yogurt mixture into molds, filling about three-quarters full.
- Add a spoonful of blueberry compote on top of each yogurt portion and swirl with a toothpick.
- Freeze for at least 3 hours until solid. When ready, remove from molds and let sit for a few minutes if needed.
