  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper (optional)
  • Salt and pepper, to taste
  • 1 14-ounce (400 ml) can coconut milk
  • 1 14-ounce (400 g) can diced tomatoes, drained
  • 1 tablespoon lime juice
  • 1/4 cup fresh cilantro, chopped (plus extra for garnish)
  • Steamed rice, for serving

Instructions

  1. In a large skillet, heat the olive oil over medium-high heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Stir in the minced garlic, cumin, paprika, and cayenne pepper.
  2. Add the chicken cubes to the skillet and cook for 5-7 minutes until golden brown on all sides, seasoning with salt and pepper.
  3. Pour in the coconut milk and bring to a gentle simmer. Stir in the drained tomatoes and lime juice. Reduce heat to low and simmer for 15-20 minutes, until chicken is cooked through and sauce thickens. Stir in chopped cilantro before serving.

Notes

You can substitute chicken with chickpeas or tofu for a vegetarian option. Feel free to adjust the spice level according to your preference.
