Ingredients
1 tablespoon olive oil
1 onion, chopped
2 cloves garlic, minced
4 cups broccoli florets
4 cups vegetable or chicken broth
1 cup milk
2 cups shredded cheddar cheese
Salt and pepper to taste
Optional: croutons for serving
Instructions
1. In a large pot, heat the olive oil over medium heat.
2. Add the chopped onion and sauté until translucent, about 5 minutes.
3. Add the minced garlic and cook for 1 minute until fragrant.
4. Toss in the broccoli florets and add the broth. Bring to a boil, then reduce the heat and simmer until broccoli is tender, about 15 minutes.
5. Using an immersion blender, blend until smooth. (Or carefully transfer to a blender in batches.)
6. Stir in the milk and cheddar cheese until melted and creamy.
7. Season with salt and pepper to taste.
8. Serve hot with croutons if desired.
Notes
For a thicker soup, add more cheddar cheese or reduce broth.
Swap broccoli for spinach or kale for variety.
Add cooked chicken or turkey for extra protein.
Reheat gently to keep the creamy texture.
