A perfect balance of sweet and savory flavors in a comforting chicken dish.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1 cup brown sugar, packed
  • 1 cup fresh pineapple chunks (or canned)
  • ½ cup soy sauce
  • ¼ cup ketchup
  • 1 tablespoon minced garlic
  • 1 teaspoon ground ginger
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil
  • Chopped fresh cilantro (for garnish)

  3. Sear the chicken for 4-5 minutes on each side until golden-brown.
  4. Remove the chicken and set aside. In the same skillet, add brown sugar, soy sauce, ketchup, garlic, and ginger, stirring until the sugar dissolves.
  5. Add pineapple chunks and stir into the sauce.
  6. Return the seared chicken to the skillet and soak in the sauce.
  7. Reduce heat to low, cover, and simmer for 20-25 minutes until the chicken reaches 165°F (75°C).
  8. Garnish with chopped cilantro and serve with rice or your favorite grain.

Notes
