- 4 boneless, skinless chicken breasts
- 1 cup brown sugar, packed
- 1 cup fresh pineapple chunks (or canned)
- ½ cup soy sauce
- ¼ cup ketchup
- 1 tablespoon minced garlic
- 1 teaspoon ground ginger
- Salt and pepper to taste
- 2 tablespoons vegetable oil
- Chopped fresh cilantro (for garnish)
Instructions
- Season the chicken breasts with salt and pepper.
- In a large skillet, heat the vegetable oil over medium-high heat.
- Sear the chicken for 4-5 minutes on each side until golden-brown.
- Remove the chicken and set aside. In the same skillet, add brown sugar, soy sauce, ketchup, garlic, and ginger, stirring until the sugar dissolves.
- Add pineapple chunks and stir into the sauce.
- Return the seared chicken to the skillet and soak in the sauce.
- Reduce heat to low, cover, and simmer for 20-25 minutes until the chicken reaches 165°F (75°C).
- Garnish with chopped cilantro and serve with rice or your favorite grain.
