- 2 teaspoons Cajun seasoning
- 8 oz pasta (penne or fettuccine)
- 1 cup heavy cream
- 1 cup chicken broth
- 1 bell pepper, sliced
- 1 onion, sliced
- 2 cloves garlic, minced
- Salt and pepper to taste
- Olive oil for cooking
- Parmesan cheese for serving
Instructions
- Cook the pasta according to package instructions until al dente, reserving some pasta water before draining.
- Heat a skillet over medium heat with olive oil, season chicken with Cajun seasoning, and sear until golden brown, about 6-7 minutes per side. Let rest and slice.
- In the same skillet, sauté bell pepper, onion, and garlic until tender. Add chicken broth and heavy cream, then bring to a gentle simmer.
- Stir in the drained pasta and sliced chicken, mixing until well-coated. Season to taste and serve with Parmesan cheese.
Notes
For a lighter option, substitute half and half or plant-based cream. Leftovers can be stored for up to 3 days in the refrigerator and reheated gently.
