Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 tablespoons Cajun seasoning
  • 8 oz pasta (fettuccine or penne)
  • 1 tablespoon olive oil
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup bell peppers, sliced
  • 1/2 cup parmesan cheese, grated
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil, add pasta and cook until al dente. Drain and set aside.
  2. Season and Cook Chicken: Season chicken with Cajun seasoning. In a skillet, heat olive oil over medium heat, cook chicken for 6-7 minutes on each side until golden brown and cooked through. Remove and let rest, then slice.
  3. Make the Sauce: In the same skillet, sauté sliced bell peppers for 4-5 minutes. Add chicken broth and heavy cream, simmer, and stir in parmesan cheese. Toss in cooked pasta and sliced chicken, mixing until well coated.

Notes

For a lighter version, replace heavy cream with half-and-half or coconut cream. Feel free to add other vegetables like spinach or zucchini.
