- 2 boneless, skinless chicken breasts
- 2 tablespoons Cajun seasoning
- 8 oz pasta (fettuccine or penne)
- 1 tablespoon olive oil
- 1 cup heavy cream
- 1 cup chicken broth
- 1 cup bell peppers, sliced
- 1/2 cup parmesan cheese, grated
- Salt and pepper, to taste
- Fresh parsley, for garnish
Instructions
- Cook the Pasta: Bring a large pot of salted water to a boil, add pasta and cook until al dente. Drain and set aside.
- Season and Cook Chicken: Season chicken with Cajun seasoning. In a skillet, heat olive oil over medium heat, cook chicken for 6-7 minutes on each side until golden brown and cooked through. Remove and let rest, then slice.
- Make the Sauce: In the same skillet, sauté sliced bell peppers for 4-5 minutes. Add chicken broth and heavy cream, simmer, and stir in parmesan cheese. Toss in cooked pasta and sliced chicken, mixing until well coated.
Notes
For a lighter version, replace heavy cream with half-and-half or coconut cream. Feel free to add other vegetables like spinach or zucchini.
