Instructions
- Cook the penne pasta according to package instructions until al dente; drain and set aside.
- In a large pot, heat olive oil over medium heat; add the onion and bell pepper, sautéing for 3-4 minutes.
- Add chicken thighs or beef and cook until browned, about 6-8 minutes; stir in minced garlic and Cajun seasoning, simmering for another minute.
- Pour in heavy cream and bring to a gentle simmer until thickened.
- Add the drained pasta and shredded cheese; stir until the cheese melts and everything is coated.
- Season with salt and pepper, garnish with chopped parsley, and serve.
