- 1 pound chicken thighs, boneless and skinless
- 1 cup rice (white or brown)
- 1 bell pepper (any color or a mix)
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 teaspoons Cajun seasoning (store-bought or homemade)
- 3 cups chicken broth (or vegetable broth)
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, stirring occasionally until the onion is soft and translucent.
- Chop the chicken thighs into bite-sized pieces. Once the onion is ready, add the chicken to the skillet, cooking for about 5-7 minutes until golden brown.
- Add the diced bell peppers and cook for another 2-3 minutes. Stir in the rice, Cajun seasoning, salt, and pepper.
- Pour in the chicken broth, raise the heat to high until boiling, then reduce the heat to low. Cover the skillet and let it simmer for about 20 minutes, or until the rice is tender.
- Fluff the rice with a fork, mixing everything together, and serve hot.
