Description
This carrot ribbon salad recipe is crunchy, refreshing, and easy to customize. Perfect as a side dish or light lunch.
Ingredients
8 large carrots, peeled into ribbons
1 cup fresh parsley or carrot tops
1 garlic clove, grated
Zest and juice of 1 lime
2 tbsp soy sauce or tamari
2 tbsp olive oil or sesame oil
1½ tbsp toasted sesame seeds
½ tsp black pepper
Instructions
1. Wash and peel the carrots.
2. Use a vegetable peeler to create thin ribbons.
3. Mix dressing: parsley, garlic, lime zest/juice, soy sauce, oil, sesame seeds, pepper.
4. Add carrot ribbons to the bowl.
5. Toss everything gently until coated.
6. Let sit for 5–10 minutes before serving.
Notes
Optional: add goat cheese, arugula, almonds, or crushed peanuts.
Try variations with cumin, peanut dressing, or orange zest.
Store ribbons in cold water up to 2 days.
Add dressing right before serving.
