Description

A comforting and hearty casserole featuring ground beef, bell peppers, and a fluffy biscuit base, perfect for family meals.


Ingredients

  • 1.5 pounds Lean Ground Beef
  • 1 Red Bell Pepper, seeded and chopped
  • 1 Yellow Onion, chopped
  • 1 ounce Taco Seasoning Mix
  • 2 ½ cups Biscuit Mix, like Bisquick
  • 1 cup Water
  • Cooking Spray, like Pam
  • ½ cup Sour Cream
  • ½ cup Mayonnaise
  • 4 ounces Diced Green Chiles, drained
  • 1 ½ cups Cheddar Cheese, Fiesta Blend, shredded, divided
  • 1 teaspoon Garlic Powder
  • ½ cup Salsa, mild

Instructions

  1. Preheat your oven to 350°F (175°C). Cook the ground beef in a skillet over medium-high heat until no longer pink, about 5-7 minutes. Drain excess fat.
  2. Combine the biscuit mix and water in a mixing bowl. Press the dough into a greased 9×13 inch casserole dish and bake for 5-8 minutes until lightly golden.
  3. In the same skillet, add onion and bell pepper to the cooked beef and sauté for about 4 minutes. Stir in taco seasoning.
  4. Spread the beef mixture over the biscuit layer. In a bowl, mix sour cream, mayonnaise, chiles, ¾ cup cheese, and garlic powder. Spread this mixture over the beef layer.
  5. Add spoonfuls of salsa on top and sprinkle with remaining cheese. Bake uncovered for 30 minutes or until bubbly and cheese is melted.

Notes

For a lighter option, substitute ground beef with chicken or turkey. Can be prepped in advance and stored in the fridge.
