- 4 boneless, skinless chicken breasts
- 2 bell peppers (any color, thinly sliced)
- 1 small onion (thinly sliced, optional)
- 2 tbsp olive oil
- 1 tsp Italian seasoning
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- Fresh parsley (for garnish)
Instructions
- Preheat the oven to 400°F (200°C).
- Season the chicken with olive oil, Italian seasoning, garlic powder, paprika, salt, and black pepper.
- Toss the sliced bell peppers and optional onions with the remaining olive oil, then arrange them around the seasoned chicken in a baking dish.
- Bake uncovered for 20-25 minutes, until chicken reaches 165°F (74°C).
- Sprinkle mozzarella and Parmesan over the dish and return to oven for 3-5 minutes until melted.
- Serve hot, garnished with fresh parsley.
Notes
For added flavor, marinate the chicken before baking. You can also replace chicken breasts with thighs for juiciness.
