  • 2 bell peppers (any color, thinly sliced)
  • 1 small onion (thinly sliced, optional)
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Fresh parsley (for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Season the chicken with olive oil, Italian seasoning, garlic powder, paprika, salt, and black pepper.
  3. Toss the sliced bell peppers and optional onions with the remaining olive oil, then arrange them around the seasoned chicken in a baking dish.
  4. Bake uncovered for 20-25 minutes, until chicken reaches 165°F (74°C).
  5. Sprinkle mozzarella and Parmesan over the dish and return to oven for 3-5 minutes until melted.
  6. Serve hot, garnished with fresh parsley.

Notes

For added flavor, marinate the chicken before baking. You can also replace chicken breasts with thighs for juiciness.
