- 1 lb ground beef
- 2 cups uncooked pasta (shells or elbow)
- 1 can (15 oz) diced tomatoes, undrained
- 1 can (10.5 oz) cream of mushroom soup (or a homemade version)
- 1 cup grated cheese (cheddar or mozzarella)
- 1 cup frozen mixed vegetables (like peas, corn, and carrots)
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Begin by bringing a large pot of salted water to a boil. Add the pasta and cook according to the package directions until it’s al dente. Drain the pasta and set it aside.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until they become soft and fragrant. Add the ground beef, breaking it apart with a wooden spoon, and cook until it’s browned. Drain any excess grease.
- Stir in the diced tomatoes, cream of mushroom soup, frozen mixed vegetables, Italian seasoning, and season with salt and pepper. Let this mixture simmer for about 5–7 minutes.
- Preheat your oven to 350°F (175°C). In a large mixing bowl, combine the cooked pasta with the beef mixture. Transfer this to a greased 9×13-inch baking dish and sprinkle the shredded cheese evenly across the top.
- Bake for about 25-30 minutes, or until the cheese is melted and bubbly.
