  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 56 medium russet potatoes, thinly sliced (about 1/8 inch)
  • 2 cups shredded cheddar cheese, divided
  • 1 cup shredded mozzarella cheese (optional)
  • 1 can (10.5 oz) cream of mushroom soup (or cream of chicken)
  • 1 cup milk
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika (optional)
  • 1 tbsp olive oil or butter (for greasing the dish)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish with olive oil or butter.
  2. In a large skillet over medium heat, cook the ground beef and chopped onion until browned (5-7 minutes), then drain excess fat.
  3. Add minced garlic, salt, pepper, and paprika to the skillet and mix well.
  4. In a mixing bowl, whisk together the cream of mushroom soup and milk until smooth.
  5. Layer half of the sliced potatoes in the greased dish, followed by half the beef mixture, half the creamy sauce, and 1 cup of cheddar cheese. Repeat the layers with remaining ingredients.
  6. Cover with foil and bake for 45 minutes, then remove foil and bake for an additional 15-20 minutes until cheese is golden and bubbly. Let it rest for 5 minutes before serving.

Notes

Slice potatoes evenly for uniform cooking. This dish can be prepared ahead of time and stored in the fridge.
