Description
A comforting, cheesy potato burrito dish that is perfect for families and gatherings, customizable for various dietary preferences.
Ingredients
Scale
- 1 pound ground beef (or substitute with ground turkey or a plant-based alternative)
- 2 cups frozen tater tots
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1/2 cup sour cream
- 1/4 cup Taco Bell chipotle sauce (adjust to taste)
- 6 large flour tortilla wraps
- Salt and pepper to taste
- Diced tomatoes (optional, for garnish)
- Chopped green onions (optional, for garnish)
- Cilantro (optional, for garnish)
Instructions
- Preheat your oven, then cook the tater tots on a baking tray according to package instructions until golden and crispy.
- While the tots are baking, heat a skillet over medium, add the ground meat, and season with salt and pepper. Brown the meat until cooked through, then drain any excess grease.
- In a mixing bowl, combine the browned meat, slightly crushed tater tots, cheddar cheese, and Monterey Jack cheese. Stir until evenly mixed.
- Warm tortillas in a dry skillet or microwave for 10-15 seconds to prevent cracking.
- Assemble the burritos by spooning the cheesy filling onto the center of each tortilla, adding chipotle sauce and sour cream. Fold and roll tightly.
- Place burritos seam side down in a greased baking dish, sprinkle with cheese, and bake for 5-7 minutes until bubbly.
- Top with diced tomatoes, green onions, and cilantro, and serve hot with extra sour cream and chipotle sauce.
