Instructions
- Preheat your oven to 400°F (200°C).
- Wash the baby potatoes and cut them in halves or quarters.
- Slice the smoked sausage into neat, 1/4-inch thick rounds.
- In a small bowl, mix ranch seasoning, garlic powder, onion powder, and black pepper.
- Toss the halved potatoes with olive oil and half of the ranch seasoning mixture.
- Line a baking sheet with parchment paper or grease it lightly.
- Spread the seasoned potatoes on the baking sheet in a single layer.
- Scatter the sliced sausage over the potatoes.
- Roast for 35-40 minutes, stirring halfway, until the potatoes are golden brown and fork-tender.
- Sprinkle shredded cheddar cheese over the roasted mixture and return it to the oven for 5 minutes until the cheese melts.
- Garnish with parsley and serve hot with sour cream if desired.
