Description
A zesty Tex-Mex main dish combining tender ground beef with fire-roasted tomatoes, jalapeños, and melted cheese. Quick and family-friendly, these tacos are packed with bold flavor and reheat beautifully for convenience.
Ingredients
Ground beef (80% lean) 1 lb
Rotel diced tomatoes & green chilies 1 (21 oz) can
Velveeta or Colby-Jack cheese 1 cup, shredded
Onion, chopped 1 medium
Taco seasoning 1 tbsp
Tortillas 6–8 (corn or flour)
Instructions
Heat 1 tbsp oil in a skillet over medium-high. Cook ground beef and onions until browned, about 6 minutes. Drain fat if needed
Stir in 1 tbsp taco seasoning. Cook 1 minute to bloom spices. Add Rotel and simmer 5-7 minutes to reduce and thicken. Stir in cheese until melted
Warm tortillas in oven at 350°F for 5-10 minutes or in a skillet. Assemble with beef mixture, cheese, and toppings
Notes
Trim fat from ground beef if you prefer a leaner option
Use fire-roasted Rotel for deeper, smokier flavor
Taco seasoning can be homemade with chili powder, cumin, paprika, and garlic
Leftovers reheat well in the oven (crisp tortillas) or microwave (soft, gooey filling)
