Ingredients

  • 2 pounds russet potatoes, peeled and small diced
  • 34 tablespoons oil
  • 1 ½ teaspoons salt
  • ½ teaspoon pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 pound ground beef
  • 1 packet taco seasoning
  • Water, as directed on the taco seasoning packet
  • 8-ounce bag Mexican shredded cheese

Instructions

  1. Toss small diced russet potatoes with oil, salt, pepper, garlic powder, and onion powder in a large mixing bowl. Transfer to air fryer basket set to 400°F and cook for 18–20 minutes, shaking the basket 2–3 times.
  2. While potatoes are frying, brown ground beef over medium heat in a skillet, crumble and sear. Drain excess grease, add taco seasoning and water as per packet instructions, and simmer.
  3. Layer crispy potatoes on a serving plate, top with seasoned ground beef and sprinkle with Mexican shredded cheese. Add optional toppings like pico de gallo or guacamole.

Notes

For extra cheesy experience, place under broiler for a few minutes. Perfect for meal prep; can be made in advance and reheated.
