Ingredients

- 1 lb lean ground beef
- 1 can black beans, drained and rinsed
- 1 cup corn (frozen or canned)
- 2 cups ready rice
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 packet taco seasoning
- 1 cup salsa
- Salt and pepper to taste
- Chopped cilantro for garnish (optional)
Instructions
- Heat a large skillet over medium heat and add the lean ground beef. Cook until browned, breaking it up with a spatula, and drain excess fat.
- Sprinkle taco seasoning over the beef and pour in the salsa. Stir and let cook for 1-2 minutes.
- Add black beans, corn, and ready rice to the skillet and stir until combined. Heat through for a couple of minutes.
- Reduce heat to low, sprinkle cheese on top, cover the skillet and cook for about 5 minutes until the cheese melts.
- Taste and season with salt and pepper; garnish with cilantro if desired. Serve warm.
Notes
Can substitute beef with ground chicken or turkey; customize with additional veggies.
