Description

A warm and comforting one-pan meal featuring seasoned beef, black beans, corn, and gooey cheese, perfect for busy weeknights.


Ingredients

  • 1 lb lean ground beef
  • 1 can black beans, drained and rinsed
  • 1 cup corn (frozen or canned)
  • 2 cups ready rice
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 packet taco seasoning
  • 1 cup salsa
  • Salt and pepper to taste
  • Chopped cilantro for garnish (optional)

Instructions

  1. Heat a large skillet over medium heat and add the lean ground beef. Cook until browned, breaking it up with a spatula, and drain excess fat.
  2. Sprinkle taco seasoning over the beef and pour in the salsa. Stir and let cook for 1-2 minutes.
  3. Add black beans, corn, and ready rice to the skillet and stir until combined. Heat through for a couple of minutes.
  4. Reduce heat to low, sprinkle cheese on top, cover the skillet and cook for about 5 minutes until the cheese melts.
  5. Taste and season with salt and pepper; garnish with cilantro if desired. Serve warm.

Notes

Can substitute beef with ground chicken or turkey; customize with additional veggies.
