Ingredients
1 lb ground beef (80% lean)
4 small russet potatoes
16 oz velveeta shredded cheese
1 can (14 oz) diced tomatoes (low-sodium)
3 green onions (white parts only)
1 tsp salt
½ tsp black pepper
¼ tsp cumin
1 tsp paprika
Instructions
Scrub and dry potatoes. Wrap each individually in wax paper with the top removed for even baking
Heat pan and brown ground beef over medium heat. Add salt, black pepper, cumin, and paprika. Break up meat with a spoon as it cooks
Position wax paper-wrapped potatoes in a single layer in the bottom of a 9×13-inch pan. Spread cooked beef mixture evenly over the potatoes. Top with shredded cheese
Bake at 400°F (200°C) for 30–35 minutes until cheese is bubbly and golden
Notes
Wax paper wrap ensures crispy potato skin. Check wrappers during baking to prevent burning. Use taco seasoning mix as an optional substitute for the spices. Let rest 5 minutes before serving for cleaner cuts. Can freeze assembled or frozen individual portions wrapped in foil.
