Ingredients
1 cup pumpkin puree
1/2 cup unsalted butter, softened
1 cup brown sugar
1/2 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
1 cup chocolate chips
Instructions
1. Preheat oven to 350°F (175°C).
2. Cream together pumpkin puree, butter, brown sugar, and granulated sugar until smooth.
3. Beat in egg and vanilla extract until combined.
4. In another bowl, whisk flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
5. Gradually stir dry ingredients into wet mixture until just combined.
6. Fold in chocolate chips.
7. Drop spoonfuls of dough onto a lined baking sheet.
8. Bake 12-15 minutes, until edges are golden.
9. Cool on baking sheet briefly, then transfer to a wire rack.
Notes

Store in an airtight container at room temperature up to 5 days, in the fridge up to 1 week, or freeze up to 3 months.
For a twist, add nuts, dried fruit, or use dark/white chocolate chips.
Sprinkle sea salt on top before baking for a sweet-salty combo.
