Ingredients
4 bone-in chicken thighs
2 tbsp olive oil
1 tbsp fresh rosemary (or 1 tsp dried)
2 garlic cloves, minced
1 lemon, sliced
Salt and pepper to taste
Optional: baby potatoes, carrots, onion
Instructions
1. Preheat oven to 400°F (200°C).
2. Pat chicken dry and place in baking dish.
3. Mix olive oil, garlic, rosemary, salt, and pepper.
4. Rub mixture over chicken thoroughly.
5. Add lemon slices and vegetables to the pan.
6. Bake for 35–40 minutes until golden and cooked through.
7. Serve hot with your choice of side.
Notes
Use boneless thighs for faster cooking.
Double the batch and store leftovers for wraps or rice bowls.
Fresh rosemary works best, but dried is fine in a pinch.
