- 2 large chicken breasts (about 1.5 lbs)
- 1 cup all-purpose flour
- 1/2 tsp salt
- 1/2 tsp black pepper
- 2 large eggs
- 2 cups panko breadcrumbs
- 1 cup grated parmesan cheese
- 1/4 cup neutral oil (such as vegetable or olive oil), plus more as needed
- 1 large head of romaine lettuce, chopped
- 1 cup croutons
- 1 cup shredded parmesan cheese (optional)
- 1/2 cup Caesar dressing
- 4 extra-large burrito-sized wraps
Instructions
- Preheat the oven to 400°F (200°C).
- Butterfly chicken breasts and season flour with salt and pepper.
- Dip chicken in seasoned flour, then into beaten eggs, and finally press into panko-parmesan mixture.
- In a skillet, heat neutral oil over medium heat and cook chicken for 3-4 minutes on each side until golden brown.
- Transfer the skillet to the oven and bake for 10-12 minutes until internal temperature reaches 165°F (75°C).
- In a bowl, toss together chopped romaine, croutons, shredded parmesan, and Caesar dressing.
- Let chicken rest, slice into strips, and assemble wraps by layering salad and chicken in each wrap.
- Roll wraps tightly and serve.
Notes
For lighter wraps, consider using whole wheat breadcrumbs or crushed cornflakes. Chicken thighs can be substituted for juicier flavor.
