Ingredients

  • 68 thinly sliced chicken breasts
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1½ cups buttermilk (or a mix of milk and yogurt)
  • 1 egg
  • 1 tablespoon hot sauce (optional)
  • Oil for frying (vegetable or canola)
  • ¼ cup reserved oil from frying
  • ⅓ cup all-purpose flour (for the gravy)
  • 2 cups milk
  • Salt and pepper to taste

Instructions

  1. Heat oil in a deep fryer or large pan to 325°F (160°C).
  2. In a bowl, whisk together flour, baking powder, baking soda, salt, black pepper, and garlic powder.
  3. In another bowl, whisk together buttermilk, egg, and hot sauce.
  4. Dredge each slice of chicken in the dry flour mixture, dip in wet mixture, and coat again in the dry flour mixture.
  5. Fry coated chicken slices in hot oil for 3-5 minutes per side until golden brown.
  6. Drain on paper towel-lined plates.
  7. To make gravy, in a large pan, add reserved oil, whisk in flour, and gradually add milk while stirring until thickened. Season with salt and pepper.
  8. Pour gravy over fried chicken before serving.

Notes

For a healthier option, use skinless chicken breasts or swap flours. Avoid overcrowding the pan while frying.
