- 6–8 thinly sliced chicken breasts
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1½ cups buttermilk (or a mix of milk and yogurt)
- 1 egg
- 1 tablespoon hot sauce (optional)
- Oil for frying (vegetable or canola)
- ¼ cup reserved oil from frying
- ⅓ cup all-purpose flour (for the gravy)
- 2 cups milk
- Salt and pepper to taste
Instructions
- Heat oil in a deep fryer or large pan to 325°F (160°C).
- In a bowl, whisk together flour, baking powder, baking soda, salt, black pepper, and garlic powder.
- In another bowl, whisk together buttermilk, egg, and hot sauce.
- Dredge each slice of chicken in the dry flour mixture, dip in wet mixture, and coat again in the dry flour mixture.
- Fry coated chicken slices in hot oil for 3-5 minutes per side until golden brown.
- Drain on paper towel-lined plates.
- To make gravy, in a large pan, add reserved oil, whisk in flour, and gradually add milk while stirring until thickened. Season with salt and pepper.
- Pour gravy over fried chicken before serving.
Notes
For a healthier option, use skinless chicken breasts or swap flours. Avoid overcrowding the pan while frying.
