- 3 medium boneless skinless chicken breasts, cut into 1-inch cubes
- 1 tablespoon olive oil
- Salt and ground black pepper (to season chicken)
- 2 cans green beans, drained (14.5 ounces each)
- 1 can cream of mushroom soup (10.5 ounces)
- 1 cup sour cream
- 2/3 cup 2% milk
- 2 cups shredded cheddar cheese (divided)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 6 ounces French fried onions
Instructions
- Sauté the chicken: Heat olive oil in a large skillet over medium heat, add the cubed chicken, and season with salt and black pepper. Sauté for about 5-7 minutes until cooked through.
- Prepare the sauce: Lower heat, stir in cream of mushroom soup, sour cream, and milk. Mix in garlic powder, onion powder, salt, and ground black pepper until creamy.
- Fold in the drained green beans and half of the shredded cheddar cheese, mixing until well combined.
- Transfer the mixture into a baking dish, top with remaining cheddar cheese, and a layer of French fried onions. Bake at 350°F (175°C) for about 25-30 minutes until bubbly and golden.
Notes
You can prepare the casserole a day in advance and store it in the fridge before baking. Customize the vegetables as per your preference.
