- Lo Mein noodles (fresh or dried)
- 1 red bell pepper
- 1 yellow bell pepper
- 2 carrots (thinly sliced)
- 2 green onions (chopped)
- ¼ cup low-sodium soy sauce
- 1 tablespoon sesame oil
- 3 cloves fresh minced garlic
Instructions
- Gather all your ingredients and chop vegetables into bite-sized pieces.
- Cook Lo Mein noodles in boiling water according to package instructions until al dente, about 4-5 minutes for fresh noodles or 8-10 minutes for dried noodles. Drain and set aside.
- In a large skillet or wok over medium-high heat, add sesame oil and sauté sliced chicken for 6-8 minutes until cooked through and golden brown. Remove and set aside.
- In the same pan, stir-fry chopped bell peppers, carrots, and green onions for 3-4 minutes until tender yet crisp. Add cooked chicken, drained noodles, soy sauce, and minced garlic. Toss everything together and serve hot.
