Ingredients
1 lb boneless, skinless chicken breast
6 cups chicken broth
1 can (14.5 oz) diced tomatoes
1 can (4 oz) diced green chilies
1 medium onion, chopped
2 cloves garlic, minced
1 tsp ground cumin
1 tsp chili powder
Salt and pepper to taste
2 cups corn (fresh, frozen, or canned)
1 cup black beans (cooked or canned)
Tortilla strips (for serving)
Fresh cilantro (for garnish)
Lime wedges (for serving)
Instructions
1. In a large pot, cook the chicken breast in chicken broth over medium heat until cooked through, 15-20 minutes. Remove and shred with two forks.
2. In the same pot, add onion and garlic to the broth. Sauté until softened, about 5 minutes.
3. Stir in diced tomatoes, green chilies, cumin, chili powder, salt, and pepper. Bring to a simmer.
4. Add shredded chicken, corn, and black beans. Simmer for 10 minutes.
5. Serve hot, topped with tortilla strips, cilantro, and lime wedges.
