- 1 pound chicken breast, sliced
- 2 medium zucchinis, sliced
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 bell pepper, sliced
- 2 tablespoons soy sauce
- Salt and pepper to taste
- Cooked rice or noodles for serving
Instructions
- Heat olive oil in a large skillet over medium heat. Add sliced chicken breast and cook for 5 to 7 minutes until golden brown and cooked through.
- Add minced garlic and cook for 1 minute until fragrant. Then, add sliced zucchinis and bell pepper, stir-frying for another 3 to 5 minutes until tender but still crisp.
- Pour in the soy sauce and season with salt and pepper. Stir everything well and cook for an additional 2 minutes before serving over rice or noodles.

This stir fry is flexible; substitute chicken with turkey or beef and add any veggies you have on hand.
