- 1 pound shrimp, peeled and deveined
- 1 cup shredded coconut
- 1 cup sweetened condensed milk
- 1 cup flour
- 2 eggs, beaten
- 1 teaspoon salt
- 1 teaspoon pepper
- Oil for frying (vegetable or canola oil works well)
Instructions
- In a medium bowl, combine the flour with the salt and pepper.
- Dip each shrimp into the flour mixture, then into the beaten eggs, and finally roll in the shredded coconut.
- Heat about an inch of oil in a frying pan over medium heat. Fry the shrimp in batches for about 2-3 minutes per side until golden brown.
- Use a slotted spoon to remove and drain on paper towels before serving.
Notes
Keep an eye on the oil temperature to avoid burning the shrimp. Serve with sweetened condensed milk or your favorite dipping sauce.
