Ingredients
2 cups corn (fresh, frozen or canned)
1/3 cup mayonnaise
1/3 cup sour cream
1/2 cup crumbled cotija cheese
1 tablespoon lime juice
1/2 teaspoon chili powder
1 small jalapeño, diced
2 tablespoons chopped green onions
Salt to taste
Instructions
1. Heat corn in a skillet until charred
2. In a bowl, mix mayo, sour cream, lime juice, chili powder, and salt
3. Stir in corn, jalapeños, and cotija cheese
4. Warm mixture in skillet until bubbly
5. Top with green onions and extra cotija before serving
Notes
For extra flavor, add a dash of smoked paprika or top with crushed hot Cheetos for a crunchy twist. Serve hot with tortilla chips or sliced veggies.
