- 1 ½ cups rolled oats
- 1 teaspoon baking powder
- ½ teaspoon ground cinnamon
- ¼ teaspoon salt
- 1 large egg
- 1 cup milk (or non-dairy alternative)
- ¼ cup maple syrup or honey
- 2 tablespoons melted butter or coconut oil
- 1 teaspoon vanilla extract
- For the Swirl:
- 1 tablespoon melted butter or coconut oil
- 1 tablespoon brown sugar
- ½ teaspoon ground cinnamon
Instructions
- Preheat your oven to 375°F (190°C) and grease an 8×8 inch baking dish.
- Whisk together rolled oats, baking powder, ground cinnamon, and salt in a large mixing bowl.
- In a separate bowl, whisk together the egg, milk, maple syrup (or honey), melted butter (or coconut oil), and vanilla extract.
- Pour the wet mixture into the dry ingredients, stirring gently until just combined.
- Spread half of the oatmeal mixture into the prepared baking dish.
- Mix melted butter, brown sugar, and ground cinnamon in a small bowl; sprinkle half over the oatmeal layer.
- Pour the remaining oatmeal mixture on top, then sprinkle the rest of the cinnamon-sugar mixture over it.
- Bake for 25-30 minutes until set and lightly golden brown.
- Cool slightly before cutting into squares and enjoy!
