  • 1 teaspoon baking powder
  • ½ teaspoon ground cinnamon

  • 1 large egg
  • 1 cup milk (or non-dairy alternative)
  • ¼ cup maple syrup or honey
  • 2 tablespoons melted butter or coconut oil
  • 1 teaspoon vanilla extract
  • For the Swirl:
  • 1 tablespoon melted butter or coconut oil
  • 1 tablespoon brown sugar
  • ½ teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 375°F (190°C) and grease an 8×8 inch baking dish.
  2. Whisk together rolled oats, baking powder, ground cinnamon, and salt in a large mixing bowl.
  3. In a separate bowl, whisk together the egg, milk, maple syrup (or honey), melted butter (or coconut oil), and vanilla extract.
  4. Pour the wet mixture into the dry ingredients, stirring gently until just combined.
  5. Spread half of the oatmeal mixture into the prepared baking dish.
  6. Mix melted butter, brown sugar, and ground cinnamon in a small bowl; sprinkle half over the oatmeal layer.
  7. Pour the remaining oatmeal mixture on top, then sprinkle the rest of the cinnamon-sugar mixture over it.
  8. Bake for 25-30 minutes until set and lightly golden brown.
  9. Cool slightly before cutting into squares and enjoy!
