Ingredients
- Chow mein noodles – 8 oz
- Mixed vegetables – 2 cups (carrots, bell peppers, broccoli, or favorites)
- Soy sauce – 2 tablespoons
- Garlic, minced – 1 tablespoon
- Fresh ginger, minced – 1 tablespoon
- Vegetable oil – 2 tablespoons
- Salt – to taste
- Black pepper – to taste
- Green onions – optional, for garnish
Instructions
- Cook the chow mein noodles according to package instructions until just al dente. Drain well and set aside.
- Heat the vegetable oil in a large pan or wok over medium-high heat. Add the garlic and ginger, stirring for about 30 seconds until fragrant.
- Add the mixed vegetables to the pan and stir-fry for 3 to 4 minutes until tender but still crisp. Add the cooked noodles and soy sauce, tossing everything together to coat evenly. Season with salt and pepper, then continue stir-frying for another 2 to 3 minutes until heated through.
- Remove from heat and garnish with green onions if desired.
