Ingredients

  • Chow mein noodles – 8 oz
  • Mixed vegetables – 2 cups (carrots, bell peppers, broccoli, or favorites)
  • Soy sauce – 2 tablespoons
  • Garlic, minced – 1 tablespoon
  • Fresh ginger, minced – 1 tablespoon
  • Vegetable oil – 2 tablespoons
  • Salt – to taste
  • Black pepper – to taste
  • Green onions – optional, for garnish

Instructions

  1. Cook the chow mein noodles according to package instructions until just al dente. Drain well and set aside.
  2. Heat the vegetable oil in a large pan or wok over medium-high heat. Add the garlic and ginger, stirring for about 30 seconds until fragrant.
  3. Add the mixed vegetables to the pan and stir-fry for 3 to 4 minutes until tender but still crisp. Add the cooked noodles and soy sauce, tossing everything together to coat evenly. Season with salt and pepper, then continue stir-frying for another 2 to 3 minutes until heated through.
  4. Remove from heat and garnish with green onions if desired.
