Ingredients

  • 1 cup granulated sugar
  • 2 large eggs
  • ⅔ cup fresh lemon juice (about 34 lemons)
  • 1 teaspoon lemon zest
  • ½ teaspoon baking powder
  • A pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the all-purpose flour and powdered sugar in a medium-sized bowl.
  3. Cut in the softened butter until crumbly.
  4. Press the mixture into the bottom of a greased 8×8-inch baking pan.
  5. Bake for about 15 minutes, until lightly golden brown.
  6. Whisk together granulated sugar and eggs in another bowl until smooth.
  7. Add lemon juice, lemon zest, baking powder, and salt; stir until blended.
  8. Pour the lemon mixture over the baked crust.
  9. Bake for an additional 20-25 minutes until filling is set.
  10. Cool to room temperature, then dust with powdered sugar before cutting into squares.
